1 cup chicken broth
1 can diced tomatoes (undrained)
1/4 c. all-purpose flour
2 Tbsp. olive oil
1 lb. smoked sausage (or bratwurst)
1 medium onion diced
1 green bell pepper diced
2 ribs celery chopped
1 carrot chopped
2 tsp. dried oregano
2 tsp. dried thyme
1/8 tsp. ground red pepper
1 cup uncooked long grain rice
Combine broth and tomato in slow cooker. Cook dry flour in skillet until it starts to brown, reduce heat to medium-stir for 4 minutes. Stir in oil, stir till smooth. Whisk flour mixture into slow cooker mixture. Add sausage, onion, pepper, carrot, celery and spices. Mix well, cook on low for 4.5-5 hours. 30 minutes before complete, put in rice OR add minute rice and it will become thicker.
