Truly Delicious (GF) Chocolate Cake
.....you'll be glad you tried this one!!
1 1/2 cup turbinado sugar
1 1/2 cup GF multi purpose flour (I use a blend)
1 cup cocoa
2 Tbsp. cake enhancer (optional, I don't use)
2 1/2 tsp. baking powder
1 tsp. salt
1 tsp. xanthum gum
2/3 cup coconut oil
4 large eggs
1 1/3 cup water
2 tsp. vanilla
Preheat oven to 350*. Lightly grease two 8" or 9" pans, I use a 9X13. In a medium mixing bowl, whisk together the sugar, flour, cocoa, enhancer, baking powder, salt and xanthum gum. Place the oil, eggs, water and vanilla into your mixer bowl, and beat well. Blend the dry ingredients 1 cup at a time, beating for 1 minute and scraping the bottom and sides of the bowl after each addition. Once all the dry ingredients have been added, beat at medium-high speed for 2 minutes, to make a smooth batter~this is KEY. Pour the batter into prepared pans. Bake the cakes for 30-33 minutes, about 3-4 minutes past the point where a toothpick inserted in center comes out clean. Remove from oven, let them cool in pan for 10 min. Turn out....(I leave in 9X13 pan and top with Coconut Cream Icing.

Nourishing your Baby? I wish I'd have known about and understood whole foods when mine were babies!!!

This is my first post about nourishing foods. We started our nourishing food journey in 2005. My daddy was diagnosed with pancreatic cancer. He passed away in 2007. He has a scary family history, almost 100%, related to terminal cancer. This was an eye-opener for me. I started looking for ways to battle the inevitable. Nourishing whole foods was the overwhelming answer. We got rid of processed cereals, boxed items, candy and packaged desserts, and chips. I started making my own bread, granolas, and cooking most meals at home. We love desserts, so sugar was the last attempted deathblow. Now, we eat better than we did, but have far to go. This is my struggle, how to juggle all there is with farm chores, farm business, family, homeschool, living for Christ in fullness, mother, wife, daughter, friend and do laundry, mow the yard, etc............you know the list!! We don't get it right each day, but we're getting it better day by day. I think there is value in progress!
